Michelin-star restaurants meet at UA

The University of Alicante analyses "Gastronomy as a business and tourism benchmark" in some lectures delivered on Monday, 15 May

With a view to the Gastronomy Studies that the University of Alicante aims to implement, the UA will hold some lectures on Gastronomy in which it will be analysed as a business benchmark and a tourist attraction. The vent will take place on Monday, at the lecture building No. 3 on the Campus of Sant Vicent.

The information sessions will be held all day long, made up of five panel discussions where they will deal with issues on science, gastronomy and, food and wine pairing; gastronomy as a tourist key; what's behind excellence; high quality recognition; and new communication spaces today, where leading experts and professionals from both the private and public sector will take part.

The third part of the meeting will be devoted to seven restaurants in the province which have been awarded a Michelin star in the province of Alicante: Kiko Moya, from L’Escaleta in Cocentaina; Alberto Ferrúz, from Bom Amb, in Javea; María José San Román, from Monastrell in Alicante; Susi Díaz, from La Finca, in Elche; and Tona Ballester, from Casa Pepa, in Ondara. The owners will explain what is behind excellence in their top restaurants.

Previously, Vice President for Research & knowledge Transfer Amparo Navarro, along with Joan Viñallonga, R&D+i head at Helados Alacant; Mari Carmen Vélez, owner and chef of La Sirena restaurant in Petrer; and Paco Torreblanca, considered the best pastry chef worldwide, will discuss on gastronomy and science pairing through innovation and research.

As far as tourist quality is concerned, some successful models will be discussed from the gastronomy viewpoint, such as those of Dénia, El Pinós, Aliments Marins Marina Alta, Taberna & Wines Portal, with the participation of the regional minister for Tourism with some marketing lines and strategic projects. A panel discussion on quality assurance will welcome the intervention of the Enrique Mendoza wineries and the Regulatory Council for Protected Geographical Identification in Xixona, where topics such as gourmet artisan meat products, pomegranates, natural health, artichokes, quality labels; artisan ice creams in Xixona.

The gastronomy, business and tourism meeting will close with a panel discussion on today's new communication spaces, with experts in digital content such as Paco Becerro, the person responsible for “Directo al paladar”; “Lazy blog” and “Diario de viajero”. José Ramón Peiró, from; Oskar García, the person in charge of digital platforms, such as “Food fighters”, 2Soy un truhán, soy un señor” and the agency “Social Monkers”; and finally, Pau García, from the Comunitat Valenciana Travel Bloggers group.

These gastronomy sessions will be inaugurated on Monday, 15 May, by University of Alicante President Manuel Palomar, Director-General for Rural Development and Agrarian Policy María teresa Cháfer; Delegate to the UA President for the implementation of the degree in Gastronomy and Director for Relations with society Ana Laguna; Director of the Water Management & Environmental Sciences Institute Joaquín Melgarejo; and Director of the UA Institute for Tourism Research José Luis Gascó.

The meeting, as Ana Laguna explained, is framed in the University of Alicante strategy for social responsibility and has been taken as an initiative to lay the foundations of a strong commitment in training future professionals in Gastronomy, a key action to ensure, along with other strategies, the economic, business and scientific development of our province.
